Know what I give thanks for every year? Freedom. Freedom to eat whatever the heck I want for Thanksgiving, like a pineapple ham instead of a turkey.
Well… sandwiches, too. I definitely give thanks for leftover sandwiches. OK, so, pineapple ham leftover sandwiches.
- 2 slices leftover ham
- ½ c leftover cranberry sauce
- 1 slice pineapple
- 2 slices monterey jack
- 1 tbsp honey mustard
- 1 ciabatta
Slice the ciabatta in half and spread honey mustard on each slice.
Layer the ham, pineapple, and monterey jack on top of the bottom slice.
Spoon the cranberry sauce over the stack and top with the top of the ciabatta.
- Serve with a side salad of walnuts, arugula, cherry tomatoes and vinaigrette!
